Copa de chocolate

Copa de chocolate or chocolate crémeux


Ingredients:

158g dark chocolate (chopped)

130g milk

130g thickened cream

40g sugar

2 large eggs yolks


For the top:

150g thickened cream

1/2 tsp of vanilla extract


Method:


1 Mix sugar and egg yolks until light, pale and fluffy

2 In a pot bring to scald the cream and milk

3 Slowly add the cream and milk over the sugar/egg mixture and mix until



4 return to the pot and cook on medium heat until 84°C while continuous stirring

5 Strain the mix and add it into the chopped chocolate. Leave it rest for 2 min before mixing



6 Place the chocolate in individuals little jars or bowls and cover then with plastic wrap.



7 Leave it rest for a few hours

8 Whip the cream with the vanilla and cover the top of the chocolate bowls



9 Enjoy!
