Gazpacho de sandia (watermelon gazpacho)

Gazpacho is the most famous cold soup in Spain, originally from the South it became a popular dish all around the Peninsula.
As a fresh summer starter they have been created a lot of differents variations as melon, watermelon, cherry or strawberry.
We have been making the watermelon as a light starter for our private dinners and customers absolutely loved it.

Ingredients:
500gr ripped tomatoes (peeled)
500gr of watermelon (seedless)
1 Italian capsicum
1 shallot
1/2 teaspoon of salt
40gr Crumble bread (optional)
Splash of Sherry vinegar
50ml of EVO
Topping:
Soft goat cheese
Croutons
Fresh basil
Method:
1. Blend all the ingredients together except the EVO.
2. Taste and add more salt or Sherry vinegar if desired.
3. Place in the fridge for at least 1h before serving, we usually make it the night before is going to be drank.
4. For platting we take a small bowl, add the gazpacho, some extra virgin olive oil, the croutons, goat cheese and finished with a basil leaf.
