Mejillones a la marinera

Mejillones a la marinera (mussels in marinara sauce)


As we said in a previous post, mussels are super economic option for seafood, plenty of vitamins that can also be eaten in so many different ways.

Marinara style is a tomato and paprika flavour sauce with a white wine base. It is a delicious way to cook mussels. This sauce is also a very tasty and popular way to cook fish or clams.



Ingredients:

1kg of mussels

1 garlic clove

1 cup of white wine


Sauce:

1 brown onion, chopped

2 garlic cloves, chopped

2 tbsp of tomato sauce

2 tbsp of smoked paprika

1 cup of white wine

2 tbsp of flour

2 cups ml of mussels juice or fish stock

1 a small bunch of parsley, chopped

salt


Method:


1 Clean the mussels if needed.

2. Put the garlic cut in half in a pan with EVO and cook in a medium heat.

3. Add the mussels and the white wine, turn the heat to high and put the lead on until the mussels opened. Don't cook them too much because we will add them to the sauce after and they will finish to cook.

4. Take the mussels and the juice out.

5. Add some more EVO and add the onion and garlic in a medium heat.

6. When they are cooked add the flour and mix to cook for 2 min.

7. In a high heat add the cup of white wine and stir until combine with the sauce.

8. When the wine is dissolved add the mussels juice, if is not enough you can add some water, the paprika and the tomato sauce.

9. Turn the heat to medium and leave the sauce cook for around 5min.

10. Add the mussels and cook for 2 min.

11 Add the chopped parsley on the top.
