Meyer lemon curd

Such a good one for people with an abundance of lemons or a helpful neighbour with an abundance Of lemons. this one uses meyer lemon and was on point but you can use any lemon or even lime.
Ingredients:
1/2 cup lemon juice
2-3 zests of lemon
125g sugar
4 yolks lightly beaten
185g butter
Method:
Put all of the ingredients except the butter in a pot and cook over low heat stirring until it thickens. Take off the heat and stir in the butter little by little until it's all melted.
