Natillas con canela

Natillas are a simple but delicious dessert very traditional all around Spain and if you love custard this one is for you. You will find it in almost every 'Menu of the day'.
Ingredients :
1l Full cream milk
6 egg yolks
140g sugar
20 Maria biscuit (1 packet is enough)
20g of corn flour
Zest of ½ a lemon (no white)
1 vanilla pod scraped
½ stick of cinnamon
Grounded cinnamon
Method:
1 In a large pot on low to medium heat take your milk to a scald in a pot with your lemon zest, vanilla pod and cinnamon, make sure it doesn’t boil, once it heats up leave the milk mixture to infuse off the heat for 15 minutes.
2. In a large metal bowl whisk you egg yolks with the sugar and corn flour.
3.Whisk in your warm milk mixture into your egg mixture into the large metal bowl.
4. Place the pot back on the heat and sieve in your combined milk egg mixture.
5. Continually stir with a spatula on low to medium heat for around 5 minutes until the mixture thickens up.
6. Once it thickens up you can take it off heat and while warm you can pour it into your vessel, we make around 100ml small dessert bowls but you can go whatever size you prefer. Place one Maria biscuit on the bottom, fill with your custard, let set in the fridge for a couple of hours, dust with cinnamon to serve.
